Healthy Breakfast – For the Woman on the Go

I am always on the hunt for a healthy breakfast idea. It’s hard during the week to have a decent breakfast when there is already so much to do to get ready for work in the morning and attempting to get as much sleep as possible.

I found this idea on Pinterest using a muffin pan. I wanted to make the recipe in my Breville Smart Oven I purchased a while ago since it uses less energy than a regular oven. So I decided to use ramekins instead which also allow for easy heat up in the office microwave.

I kept it pretty simple using only the following Ingredients:

1.) Eggs – Estimated 2 eggs per cup for 4 cups but actually only ended up being 6 eggs.

2.) Green Bell Pepper

3.) Spinach

4.) 2 Sausage Patties

5.) Parsley (Needed to use it up)

First – Prep the Ingredients.

  

 

Next – Add all the ingredients into the cups… dry ingredients first then the eggs.

  

Finally, throw them in the oven until they rise.

 

It took about 15 minutes for these to be complete. Take a fork and check the middle for the cup to be fully cooked.

 

All done! Then you just heat them up in the microwave at work and pair them with some fruit. You’ve got your veggies, protein, and fruit. Not a bad way to start the day.
