Not sure if I have shared this blog in the past but man have I been lucky to find her: “Oh She Glows.” Catchy name right? Very creative.
This blog is my new go to when trying out new vegan recipes. Everything I have tried thus far has turned out wonderful. She knows how to make some tasty dishes. Her blog inspires me to stick with the vegan lifestyle and shows truly how easy (and delicious) it can be. I need to remember that it’s not about what you can’t have but all the possibilities you can experience when you explore life outside of meat and dairy.
My most recent favorite is her Rainbow Raw Pad Thai. It was so good, I literally caught the hubby with the bowl in the air trying to get the last drop of dressing. Even if you do not think you like Thai food, try this one. I thought I was not a big fan of this genre as well but this dish will keep you coming back for another bite.
I also discovered Angela’s version of a Chocolate Chip Cookie Dough Blizzard from Dairy Queen. Can I just say… I am in love with Dairy Queen, so this discovery of a healthy alternative (not to mention non-dairy) was music to my ears. The main ingredient: frozen bananas. Who knew that you could blend some frozen bananas with milk and whatever else you feel like to get a sensational cold dessert. And given our current temperatures, anything cold is what I’m looking for.
Side note: I just realized that I could make my own favorite blizzard “The Hawaiian” with frozen bananas, coconut, and pineapple! That just made my night folks!!
I love sharing good finds and her blog is definitely one of them. She is coming out with a cookbook next year as well. That is 100% bought!
Go check out her recipes today and let me know which ones you enjoy.
